There's a rails for trails course up in Park City (25-30 miles?). You can see the path on the left, next to the main road as you get close to Park City. I don't know how much is cleared off in the snow season. There is also a gravel road that goes from Deer Valley (Deer Valley is just down the rd from PC)to Sundance, again it's probably down for the season.
Downtown's not a bad run. You can go around The Temple, which is nice.

The thin air thing is real. I don't know about the bathroom stops but I can tell you that the height does give you altitude sickness. Drinking on the plane will get you off on the wrong foot. If you want to increase your odds of getting a headache, there are 2 good breweries near Union Station. There's a great brewery in Park City, Wasatch at 250 Main St. They have Polygamy Porter, Raspberry Wheat to name a few, or so I've been told.

Have fun and the sickness thing, isn't a sure thing.
